Tunisian Olive Oil is the fruit of more than 60 years experience in the field of olive oil production. It is also the product of a "what to do" knowledge that has been transferred from father to sun. In fact, the Yacoubi family possesses its own dive farms in centre of Tunisia and it has constructed the first olive oil production factory in the 1940's. Our activities have been permanently modernized through history. Actually, our mills are equipped with modern chains that can produce up to 90 tons per day. Mastering the procedure of olive oil production is evidently our major excellence, that is from gathering until the final marketing of the merchandise; passing by storing and bottling. We use the most sophisticated techniques; this allows us to reduce human intervention for the purpose of obtaining an extra-virgin olive oil of high quality.

High technology :
The plant for the extraction olive oil is composed of a conveyor belt in anti-acid rubber suitable for contact with foodstuffs which takes the olives from the loading hopper and conveys them into the washing and leaf-removing tank. Once the olives have undergone this treatment, they are taken onto an archimedean screw conveyor and reach the pressing machine and from there the kneading machine. Here a monoscrew pump wich ensures a constant and emulsion-free feeding transfers the olive paste to the decanter where the husk water will actually be separated from the oil it self. The husk coming out from decanter is removed by means of one or more Archimedean screw. The liquids (vegetation water and oil) dropping go to vibrating filter and proceed in continuosly through monoscrew pump to the separator for the final stage. The boiler burner used with finished husk or diesel burner to provide the necessary heating water for the kneading machine, and plates heat exchanger for the automatic dilution of paste in pressing machine. An electric command panel completes the plant.
All the machines in contact with the foodstuff are manufactured in stainless steel.
Storage :
The Tunisian olive oil Company distinguishes with a big ability of stock which be effectuated in metallic tanks having specific alimentary characteristics and underground reservoirs made of reinforced concrete covered with a high quality earthenware.
